This vegan breakfast hash, full of potatoes and vegetables, is made entirely in the oven, using only a baking sheet and baking dish!

Savory or sweet breakfast ?! Which do you like?
I'm back and forth! Sometimes I like sweet breakfasts, like carrot cakes baked with oatmeal, and at other times I just want a little potato and a savory sauce. In an effort to include more vegetables in my diet, I have combined these potatoes with other healthy goodness.
This breakfast hassle of potatoes, pinto beans, zucchini, squash, peppers, and mushrooms! You can replace the beans or vegetables you use (tomatoes and spinach will be delicious!). Maybe you want to add something "fat" like this breakfast sausage.
I also enjoy this topped with salsa to give it a kind of southwestern talent. The possibilities are endless.
I chose to add nuts because they offer a lot of protein, magnesium, and iron.

INGREDIENTS
- 4 cups of potatoes peeled and diced
- salt and pepper to taste
- 1 can of pinto beans are dried and rinsed
- 1 cup of zucchini is cut
- 1 cup of chopped pumpkin
- 1 red bell pepper chopped
- 1/2 cup sliced mushrooms
- 1.5 teaspoon garlic powder
- 1.5 teaspoon shallot powder
- 1/2 tsp paprika
- a pinch of chili flakes
INSTRUCTIONS
- Preheat the oven to 425 degrees Fahrenheit.
- Stir the potatoes with salt and pepper and spread it on a baking sheet. Let the potatoes roast for 25 minutes. Stir and put it back in the oven.
- In a separate baking pan or iron skillet, mix the remaining vegetables, nuts, and spices into one. Place the baking sheet in the oven next to the potatoes and continue to bake them both for 15 minutes.
- Stir the potatoes with vegetables and beans, season with more salt and pepper if desired, and serve!
